Prosper and Mexia

This past week was fun and a little busy, but also laid back. Saturday, Thor flew in, hubby and Bud went to pick him up from the airport, after visiting for a while, Bud made chicken nachos, I brought salad and fixings, I also tried a new recipe from Pioneer Woman, JalapeƱo Poppers, we enjoyed dinner together at Bud and Ellen's. Bud and Ellen live in the town of Prosper, Texas. The first settlers arrived in this area in 1846 for the black fertile prairie soil of North Texas where cotton was a key crop. Between 1850 and 1902, two settlements existed. One community, Rock Hill, was two miles south of the present town. The second community, Richland, was one mile north. The development of these small communities was expedited in 1876 when Count Courts ordered small tracts of land to be established for quick sale. Hubby and I had a fun time watching the Super Bowl Game. It was only the two of us, but we did our best trying to eat all the food. Still had some leftovers. "Keeping it real" I was happy that the Eagles didn't win. Here is all the yummy food from the cheese shop in Waco. Our site until February 25th. Monday, we ran errands and tried to get our grocery shopping done for the week. I also picked up some pretty flowers for Valentine's Day. They are still looking good. Purple is my favorite color. Fun fact: If the origin of Valentine's Day were a Facebook relationship status, it would read,  It's complicated.  Sure, today the meaning of Valentine's Day is entrenched in love and romance, bringing to mind boxes of chocolate, bouquets of flowers, romantic dinners, and heart-eye emojis. Super Bowl Sunday

First, are you one who likes a Super Bowl Party, watch the Super Bowl because your team is playing, watch it because you love football, or just want to see if there are any funny commercials? I personally, like to see what the commercials will be like and hoping that there are funnier ones on this year. I love having Super Bowl Parties, this year it will just be hubby and myself. Time for football! Secondly, last week of Waco was fun, cold, rainy and awesome. The Lord allowed us to to have a wonderful Monday. We made reservations for Magnolia Table to eat lunch. Hubby had breakfast and I had soup. I really like soup! It was a nice place and we would go there again. I felt it was busy, especially for a Monday, but our waitress said it was actually a slow day for them. Interesting.  It was windy though. Wonderful Waco

What an interesting time we have had in Waco this past week. When we arrived, it was nice and sunny - wonderful weather, then the winter storm hit late last Monday. Fortunately, hubby checks on the weather, so we were able to go to HEB before the freezing weather hit. The nice thing about the weather was that we were able to eat comfort food. I made chicken pot pie, chili and pot roast that fed us until Friday lunch. By Friday, we were able to get out and enjoy some of the sites in Waco. Our site for two weeks, before the freeze. Our new welcome mat is frozen. The truck is frozen. The lowest temperature was 26.8 and we  stayed below freezing for 3 days. Chicken Pot Pie Chili, yes, I am from Texas, but I put beans in my chili.
