Prosper and Mexia

This past week was fun and a little busy, but also laid back. Saturday, Thor flew in, hubby and Bud went to pick him up from the airport, after visiting for a while, Bud made chicken nachos, I brought salad and fixings, I also tried a new recipe from Pioneer Woman, Jalapeño Poppers, we enjoyed dinner together at Bud and Ellen's.

Bud and Ellen live in the town of Prosper, Texas. The first settlers arrived in this area in 1846 for the black fertile prairie soil of North Texas where cotton was a key crop. Between 1850 and 1902, two settlements existed. One community, Rock Hill, was two miles south of the present town. The second community, Richland, was one mile north. The development of these small communities was expedited in 1876 when Count Courts ordered small tracts of land to be established for quick sale. These tracts, each approximately 160 acres in size, and they were sold for $3.50 per acre. Dr. A. T. Bryant of McKinney purchased one of these tracts, which later became the center for the Town of Prosper. Once the St. Louis and San Francisco Railroad was established in March of 1902 it forced the communities of Rock Hill and Richland to merge forming the Town of Prosper.

For years, Prosper was the central stop for the railroad between Dallas and Sherman. When community officials applied for a post office with the Name "Richland," they were informed the city name was already taken. Postmaster B.J. Naugle asked for an alternative name, and J.C. Slaughter suggested the name "Prosper," because crops that year had been very prosperous. The town was incorporated in 1914 with a commission form government and a population of 500. The 2010 census had Prosper's population as 9,423. For the 2020 census Prosper's population rose to 30,174. You can tell how the town has grown, people and cars are everywhere.

Sunday, we went out to eat at Mash'D. They had great food and we enjoyed ourselves.

Hubby spent the night on Sunday as they were getting ready to head out on Monday for Mexia, Texas. Bud has a hunting lease there and Thor, Bud, hubby and Bud's son, Josh, were there Monday until Wednesday. Monday, Ellen and I got together for lunch and shopping. We had a fun time.

Mexia was laid out in 1870, and the following year the Houston and Texas Central Townsite Company began offering lots for sale. A post office was built in 1872 and the town was incorporated the following year. It was named after General José Antonio Mexiá, a Texan army hero in the Texas Revolution. Fun Fact: late model Anna Nicole Smith lived in Mexia and went to ninth and tenth grade there.

Tuesday, I basically chilled. "Keeping it real" there are shows that I like to watch, and hubby doesn't. So, I took that opportunity to watch "Chicago Fire." I did do laundry and got up from the couch a time or two, but I will admit, I watched 13 episodes. 

Wednesday, after the guys got home, I went over to see my hubby. We waited until Ellen came home from work and then went out to dinner. Sorry, no pictures. It was a very good restaurant and if you are ever in the area and want BBQ, Hard Eight is the place to go.
 
Thursday, hubby and I went out to eat one more time at Salsa Tex Mex Restaurant. The weather has been cold and windy, and it was really hard to make ourselves get out in the weather, but I also needed to pick up some things from Walmart and Salsa's is right there.

Friday, we met up with hubby's cousin Belinda and her husband, Andy. We had a great visit and went out to eat, it was a lot of fun hanging out with them.

Saturday, we headed out to Hot Springs, Arkansas and we will be here for a week. I am so excited to share all about Arkansas and get a new picture for the map.
